Anyone who knows me will know that I love anything in mini form…cats, henry hoover, chocolate mini eggs and so I thought why don’t I bake some mini scones – also you can eat more of them and not feel as bad as their mini!
So these are really easy to make and very yummy. You can eat them either hot or cold, filled with butter or even some ham and salad – the possibilities are endless!
8 oz of Self Raising Flour
2 oz Unsalted Butter
1 oz of Mature Cheddar Cheese (add more if you want them cheesier)
150 ml of Milk
1 tsp of Mustard
Preheat the oven to 220 degrees
Mix the flour and salt together
Rub in the butter to a breadcrumbs consistency
Stir in the cheese and add the milk to get a soft dough
Roll out and cut into circles
(I used an egg cup to get the mini shape and the thickness is about 1/2 a centimetre)
Brush each with milk and bake for 10-15 minutes until golden brown
