Hungry Hannah: Lemon Drizzle Cake

I love the taste of lemon and always have – I was the child who ate the lemons out of a glass of coke and didn’t squirm.

So I thought why not bake a lemon drizzle cake. This is the easiest bake I have done and apart from the cooking is relatively quick so how did I do it….


225g Unsalted Butter

225g Caster Sugar

4 Eggs

Zest of 1 Lemon

225g of Self-Raising Flour


Preheat the oven to 180 degrees

Beat together the butter and sugar until pale and creamy.

Add 1 egg in at a time

Sift in the flour and then add the lemon zest

Pour into a loaf tin and bake for 45-50 mins

It’s that simple!!

For the topping I whipped up some lemon juice and icing sugar so it had a real sharp kick to it and then drizzled it over the cake once it was cooled.
